Beer Foam: A Heady Topic

Beer is the most notable beverage characterized by stable and persistent foam. And while fluffy-white, cottony, pillows are easy to draw in a cartoon or create for picture-perfect photographs, brewing, cellaring, packaging, and dispensing beer with that iconic crown is not an easy task. In this practical talk, beer foam is covered from raw material selection through collapse and lace deposition during consumption. Key topics include foam composition, development during dispense, collapse, lacing, measurement, mouthfeel, consumer perception, and methods brewers can use to improve foam.
